Ashleigh Butler

Ingredients

  • 1 3/4 cups rolled oats
  • 1 1/4 cup chopped nuts or seeds *see note
  • 2 tbsp chopped nuts or seeds for sprinkling on the top ( I used sesame seeds)
  • 1 cup dried fruit goji berries, currants, sultanas, raisins, chopped figs or chopped dried apricots
  • 80 grams coconut oil
  • 110 grams tahini
  • 110 grams honey

Instructions

  • Preheat the oven to 180 degrees celsius.
  • In a large bowl combine the oats, nuts and seeds
  • Place a small saucepan/pot on the scales and combine the three wet ingredients into the pot. This is an easy way to measure them all and less cleaning up. Transfer to the stove and heat on very low until they have combined well and melted.
  • Pour the wet ingredients into the dry and stir well to combine. Press into a 24cm square tin ( or similar) lined with baking paper, sprinkle your additional nuts and seeds onto the top and bake for 20 minutes until golden.
  • Allow to cool, slice and enjoy!
