Add the gelatin to the water and mix well, setting the gelatin aside to bloom (thicken)
Add the beetroot and strawberries to a blender with the honey if using, and blend
Pour into a small saucepan and add the bloomed gelatin. Stir over a low heat until the gelatin has dissolved
Pour into moulds or a baking dish to set in the fridge for at least two hours - if serving to babies under 12 months, cut into finger length strips once set.
Notes
