Peel and finely grate the sweet potato, squeezing the juice out into the sink before adding it to a bowl
Take the chicken mince and squash it with the side of the knife to smooth out the texture. Add the chicken to the bowl with the sweet potato
To the bowl also add the paprika, finely grated garlic clove, salt and the tapioca starch. Mix well to combine
Roll into nugget size balls
Preheat a large frying pan over a high heat and add in the tallow/lard. Once hot, place the bites into the pan
Slightly reduce the heat to medium - high and fry on each side until golden, crunchy and cooked within
* You can bake these in the oven instead of frying if you wish - I recommend drizzling them with olive oil and baking on 180 degrees for roughly 35 minutes until golden and cooked within. Flip the bites at the half way cooking point!
