Gingerbread Christmas Bliss Balls

Ingredients
  

  • 1/3 cup pecans
  • 1/3 cup sultanas
  • 3/4 cup dried dates
  • 1/3 cup desiccated coconut
  • 1/2 cup almond meal
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 TBSP butter/ghee or coconut oil
  • 1 TBSP honey

Instructions
 

  • Soak the dried dates in boiling water for 10 minutes - then strain and set aside
  • Add the soaked dates to a food processor with the pecans, almond meal, desiccated coconut, sultanas, cinnamon, ginger, honey and melted butter. Process until the mixture comes together
  • Begin rolling the bliss balls by taking roughly 1.5 tbsp of the mixture and rolling into balls. Repeat this process until all of the mixture has been rolled

Notes

* Store the bliss balls in the fridge for 5 days - they can also be frozen.
