Green Pancakes

Equipment

  • Blender
  • Frying Pan

Ingredients
  

  • 2 eggs
  • 1/4 cup fresh coriander
  • 1/3 cup baby spinach
  • 1 tbsp fresh basil leaves
  • 1/2 cup cassava flour
  • 1/4 cup grated cheese (omit under 12 months)
  • 1 small garlic clove diced
  • 1/4 tsp baking powder
  • 1 tbsp ghee (for frying)

Instructions
 

  • Add all ingredients to blender
  • Blend until smooth
  • Preheat a frying pan with ghee over a medium heat. Once hot, spoon in the batter to form small pancakes
  • Fry until small bubbles appear on top, then flip and fry until cooked within
