Lamb and Liver Koftas

Equipment

  • Mixing Bowl
  • Frying Pan
  • Spatula or Tongs

Ingredients
  

  • 500 grams lamb mince
  • 1 big handful flat leaf parsley/mint finely chopped
  • 1 zest of lemon
  • 2 tsp cumin
  • 1 tsp garlic powder

Optional:

  • 1-2 raw chicken livers, finely chopped or if frozen grate OR 1-2 serves desiccated liver powder
  • 2 TBSP crumbled feta cheese omit under 12 months

Instructions
 

  • Add all ingredients into a bowl, and using your hands, mix together until combined
  • Roll the mixture into small sausage shapes (approximately 9-12)
  • Place a frying pan on a medium-high heat, and add 1 TBSP ghee or olive oil, once hot, add the koftas. Be careful not to overcrowd the pan (you may have to do this in batches).
  • Cook, turning occasionally, for 10 minutes or until cooked through
