Avocado Oil Mayonnaise

Ingredients
  

  • 1 egg yolk
  • 1 TBSP lemon juice
  • 1 TBSP water
  • 1/4 tsp salt
  • 1 pinch pepper
  • 150 ml avocado oil can sub for olive oil

Instructions
 

  • Separate the egg yolk from the white and add the egg yolk to a bowl with the lemon juice, water, salt and pepper. Blend with a hand mixer until smooth
  • Slowly begin adding the avocado oil while blending until the oil has emulsified and is thickening
  • Spoon the mayonnaise until a jar to store in the fridge 

Notes

Able to be frozen - no
* You can serve this mayonnaise as is or you could even mix through some sauerkraut brine/finely chopped sauerkraut when serving for a probiotic boost!
