Carrot Cake Bliss Balls

- 3/4 cup macadamias
- 1.5 cup rolled oats
- 1/2 cup sunflower seeds
- 1/2 cup dessicated coconut
- 1/4 tsp cinnamon
- 3 tbsp finely grated carrot - juice squeezed out
- 1.5 tbsp MCT oil
- 3 tbsp maple syrup
- 1.5 tbsp orange juice
- Zest of 1 small orange
- Extra 4 tbsp shredded coconut for rolling
Add the macadamias, rolled oats, sunflower seeds, dessicated coconut and cinnamon to a blender or food processor and blend/pulse until a meal has formed
Add in the maple syrup, MCT oil, finely grated carrot (juice squeezed out into the sink), orange juice, orange rind and blend/pulse once more until the ingredients begin to stick together
Roll into balls and coat in extra shredded coconut
Keep in the fridge for up to 5 days or freeze for up to 3 months
