Cashew & Coconut Snowballs

Equipment

  • 1 Blender or Food Processor

Ingredients
  

  • 1/2 cup cashews
  • 1 1/4 cup desiccated coconut + extra for rolling
  • 2 TBSP melted coconut oil
  • 2 TBSP almond meal
  • 2 TBSP collagen optional
  • 2 TBSP honey omit under 12 months
  • 1/4 tsp lime zest
  • 1 pinch salt

Instructions
 

  • To a blender add the cashews and pulse until it resembles the texture of almond meal
  • Next add the coconut, almond meal, melted coconut oil, collagen, honey, lime zest and salt
  • Pulse until the mixture comes together
  • Begin rolling into balls. Roll each ball in extra desiccated coconut to coat
  • Complete this process until you have rolled all of the mixture. Balls can be stored in the fridge for 5 days or the freezer for 2 months
