Cashew & Coconut Snowballs

Ingredients
  

  • 1/2 cup cashews
  • 1 1/4 cup desiccated coconut + extra for rolling
  • 2 TBSP melted coconut oil
  • 2 TBSP almond meal
  • 2 TBSP collagen optional
  • 2 TBSP honey omit under 12 months
  • 1/4 tsp lime zest
  • 1 pinch salt

Equipment

  • 1 Blender or Food Processor

Method
 

  1. To a blender add the cashews and pulse until it resembles the texture of almond meal
  2. Next add the coconut, almond meal, melted coconut oil, collagen, honey, lime zest and salt
  3. Pulse until the mixture comes together
  4. Begin rolling into balls. Roll each ball in extra desiccated coconut to coat
  5. Complete this process until you have rolled all of the mixture. Balls can be stored in the fridge for 5 days or the freezer for 2 months
