We all know that toddlers love finger foods. And these cashew and coconut bliss balls make for a perfect snack – they are summery and just delicious for the whole family. This recipe is not only easy to make but is also packed with nutrients to make it a balanced snack. One of the ingredients in this recipe is collagen. Collagen is a protein that is important for skin, hair and nail growth, as well as for strong bones and healthy joints and gut support.

The recipe is easy to make and won’t take much of your time. All you need is a food processor or a blender, add all the ingredients, and blend until you have a dough like mixture. Once the dough has been formed, roll it into small balls and store them in an airtight container. You can serve these balls as snacks or as a dessert after a meal.

Cashew & Coconut Snowballs

  • Blender or Food Processor
  • 1/2 cup cashews
  • 1 1/4 cup desiccated coconut (+ extra for rolling)
  • 2 TBSP melted coconut oil
  • 2 TBSP almond meal
  • 2 TBSP collagen (optional)
  • 2 TBSP honey (omit under 12 months)
  • 1/4 tsp lime zest
  • 1 pinch salt
  1. To a blender add the cashews and pulse until it resembles the texture of almond meal

  2. Next add the coconut, almond meal, melted coconut oil, collagen, honey, lime zest and salt

  3. Pulse until the mixture comes together

  4. Begin rolling into balls. Roll each ball in extra desiccated coconut to coat

  5. Complete this process until you have rolled all of the mixture. Balls can be stored in the fridge for 5 days or the freezer for 2 months

Yes, providing they are ok with the allergens and can manage the shape. You could always make them more of a log or bar shape if needed :)
