Ingredients
2cooked sausages of your choice
3eggs
1cupgrated zucchini juice squeezed out
1small cob of corn
1/2grated red applejuice squeezed out
1/2brown onion
2garlic cloves
4tbspspelt flouror cassava flour for gluten-free
1tspmild curry powder
1/2tspsaltif appropriate
1tbspcooking oil or fat for fryingwe love ghee, tallow or olive oil
Instructions
1. Take out a large bowl and crack in the eggs, whisking gently
2) Grate the zucchini and apple and squeeze out the juice for both. Add them to the bowl with the eggs
3) Remove the corn from the cob and place it into the bowl too
4) Finely dice the garlic and onion, adding them to the bowl with the finely chopped cooked sausages, flour of choice, curry powder and salt. Mix well to combine. Here you can add extra flour if you feel it is necessary
5) Preheat a frying pan with your choice of cooking oil/fat to a medium - high heat. Once hot begin spooning in the mixture to form fritters
6) Fry on each side for roughly 3 minutes until golden and cooked within
