Curried Sausage Fritters

Equipment

  • Frying Pan
  • Grater
  • Bowl
  • Whisk, fork

Ingredients
  

  • 2 cooked sausages of your choice
  • 3 eggs
  • 1 cup grated zucchini juice squeezed out
  • 1 small cob of corn
  • 1/2 grated red apple juice squeezed out
  • 1/2 brown onion
  • 2 garlic cloves
  • 4 tbsp spelt flour or cassava flour for gluten-free
  • 1 tsp mild curry powder
  • 1/2 tsp salt if appropriate
  • 1 tbsp cooking oil or fat for frying we love ghee, tallow or olive oil

Instructions
 

  • 1. Take out a large bowl and crack in the eggs, whisking gently
  • 2) Grate the zucchini and apple and squeeze out the juice for both. Add them to the bowl with the eggs
  • 3) Remove the corn from the cob and place it into the bowl too
  • 4) Finely dice the garlic and onion, adding them to the bowl with the finely chopped cooked sausages, flour of choice, curry powder and salt. Mix well to combine. Here you can add extra flour if you feel it is necessary
  • 5) Preheat a frying pan with your choice of cooking oil/fat to a medium - high heat. Once hot begin spooning in the mixture to form fritters
  • 6) Fry on each side for roughly 3 minutes until golden and cooked within

Age appropriate: When on 2+ meals a day
Can be frozen? Yes
Serve with yoghurt or vegetable puree as a dipper!
