In a small saucepan, simmer all of the ingredients on very low stirring regularly for about 5 to 10 minutes. The fruit will soften and a nice jam-like consistency will form.
Remove from the heat and blend. Store in a jar in the fridge for up to a week.

Whisk the egg in a medium sized bowel. Place the bread into the bowl with the egg to allow the bread to soak up the egg.
Place a frypan on medium heat with a splash of oil or butter and pan fry the egg soaked bread until golden. Flip and repeat on the other side.
