Whisk the eggs, cinnamon, vanilla, salt and milk in a shallow bowl.
Place 2 slices of bread into the egg mixture. Leave for 2 minutes to soak up the mixture, then flip onto the other side for another 2 minutes to soak.
Place a frypan on medium heat with a splash of oil or butter and pan fry the egg soaked bread until golden. Flip and repeat on the other side.
Serve with berry jam and yoghurt or ricotta
