Iron-rich sauce

Equipment

  • Food processor or blender

Ingredients
  

  • 1/2 cup mixed herbs of choice Eg parsley, coriander, mint, basil
  • 1/2 cup baby spinach
  • 1/2 avocado (medium sized)
  • 1 small clove garlic (peeled)
  • 1/2 cup extra virgin olive oil
  • 1 lime juice only
  • 1 tsp apple cider vinegar
  • 1 tsp maple syrup (optional)
  • 1/4 tsp sea salt
  • 1 tsp spirulina

Instructions
 

  • Pop all the ingredients in a food processor or blender and blend until completely smooth. Add more oil if necessary.

Notes

Can be stored in fridge for up to 5 days (some discolouration is normal) or freeze.
This is delicious served with vegetables, lamb cutlets, as a pasta sauce or with steak.
