Iron-rich sauce
GF | DF | EF | RSF | NF
- Food processor or blender
- 1/2 cup mixed herbs of choice (Eg parsley, coriander, mint, basil)
- 1/2 cup baby spinach
- 1/2 avocado ((medium sized))
- 1 small clove garlic ((peeled))
- 1/2 cup extra virgin olive oil
- 1 lime (juice only)
- 1 tsp apple cider vinegar
- 1 tsp maple syrup ((optional))
- 1/4 tsp sea salt
- 1 tsp spirulina
Pop all the ingredients in a food processor or blender and blend until completely smooth. Add more oil if necessary.
Can be stored in fridge for up to 5 days (some discolouration is normal) or freeze.
This is delicious served with vegetables, lamb cutlets, as a pasta sauce or with steak.
