Passionfruit, lemon curd gummies

  • Small Saucepan
  • Whisk
  • Fine Sieve
  • Refrigerator
  • Fine Sieve
  • 5 tbsp  passionfruit – roughly 3 big juicy passionfruit 
  • 1 tbsp  lemon juice 
  • Zest of 1 lemon
  • 2 whole eggs + 2 egg yolks 
  • 80g  grass fed butter
  • 2 tsp  honey 
  • 1.5 tbsp   gelatin 
  • 1/4 cup  water
  1. Bloom the gelatin by mixing the gelatin into 1/4 cup water. Mix and allow it to thicken 

  2.  In a small saucepan, add in two whole eggs and two egg yolks and whisk 

  3.  To the same saucepan add the lemon juice, lemon zest, honey and the bloomed (thickened) gelatin

  4. Place the saucepan over a low heat on the stove top and whisk all ingredients continuously until the gelatin has dissolved. Whisking continuously is important so that the eggs don't scramble

  5. Remove the saucepan from the heat and strain the mixture through a fine sieve to remove any specks of cooked egg white (there should not be much) 

  6. Add the mixture back into the saucepan and back on the heat, stirring in the passionfruit pulp and mixing well. Allow this to cook, still stirring constantly, for one minute

  7. Remove from the heat and pour into gummy moulds or a baking tray to set in the fridge for at least two hours
