They’re soft, herby, and packed with protein, making them a great make-ahead option for busy days. Plus, they freeze well and taste delicious warm or cold, which means less stress and more flexibility at mealtimes!

Ingredients

½ cup uncooked beef mince
2 eggs
¾ cup grated zucchini (juice squeezed out)
2 tbsp finely chopped fresh basil
2 tbsp finely chopped fresh parsley
6 tbsp cassava flour*
1 garlic clove, finely diced
1 tbsp oil/fat for frying

Method

Grate the zucchini and squeeze out as much liquid as possible.
Finely dice the garlic, basil and parsley.
In a large bowl, crack in the eggs and whisk well.
Add the zucchini, garlic, herbs, and cassava flour. Mix to combine.
Pick apart the beef mince and add it into the mixture in small pinches, mixing as you go to ensure it’s evenly incorporated.
Preheat a large frying pan over medium-high heat and add the cooking oil or fat.
Once hot, spoon in the mixture to form fritters. Flatten slightly if needed.
Cook for approximately 5 minutes, flipping once, until golden on both sides and the beef is fully cooked through.
Cool slightly before serving. Add a pinch of salt if serving to older children or adults.

Beef mince: Can be swapped for lamb, chicken, or turkey mince.
Cassava flour: Substitute with plain flour, spelt flour if gluten is tolerated, or buckwheat flour if gluten free is needed.
Fresh herbs: Use dried herbs (½ tsp each) if fresh isn’t available, or swap for coriander, chives or even baby spinach.
