Delicious, and nutritious snack that little (and big) ones can enjoy as a wholesome snack. A delightful combination of naturally sweet and hearty flavours, perfectly chewy and satisfying.
Perfect as a mid-afternoon snack, or to take to pick up to avoid hangry-ness!
Apricot + Oat Biscuits
- 1 cup white spelt flour
- 3/4 cup desiccated coconut
- 3/4 cup rolled oats
- 1/2 cup tapioca starch
- 1/2 tsp baking powder
- 1 egg
- 80 grams butter (or coconut oil for dairy free)
- 2 tbsp honey
- 1/2 tsp vanilla essence
- 2/3 cup dried apricots (soaked in boiling water until softened)
Preheat the oven to 170 degrees and line a baking tray with baking paper
Place the dried apricots in boiling water to soak for roughly 10 minutes until softened
Take out a large bowl and add in the spelt flour, tapioca starch, dessicated coconut, rolled oats and baking powder. Mix gently to combine
Place the butter and honey in a small saucepan over a low heat to melt
Crack the egg into the dry ingredients and roughly whisk
Drain the apricots and roughly mash with a fork
Pour the melted honey and butter and vanilla into the dry ingredients with the apricots and mix well to combine
Begin rolling the mixture into balls and pressing them down onto the baking tray to form the shape of your cookies
Place into the oven and bake for roughly 13 minutes until golden on top
