Oat + Apricot Biscuits

Delicious, and nutritious snack that little (and big) ones can enjoy as a wholesome snack. A delightful combination of naturally sweet and hearty flavours, perfectly chewy and satisfying.

Perfect as a mid-afternoon snack, or to take to pick up to avoid hangry-ness!

Apricot + Oat Biscuits

Course 2 meals a day, 3 meals a day, Baby Led Weaning, BLW, Snack
Servings 15 biscuits

Ingredients
  

  • 1 cup white spelt flour
  • 3/4 cup desiccated coconut
  • 3/4 cup rolled oats
  • 1/2 cup tapioca starch
  • 1/2 tsp baking powder
  • 1 egg
  • 80 grams butter or coconut oil for dairy free
  • 2 tbsp honey
  • 1/2 tsp vanilla essence
  • 2/3 cup dried apricots soaked in boiling water until softened

Instructions
 

  • Preheat the oven to 170 degrees and line a baking tray with baking paper 
  • Place the dried apricots in boiling water to soak for roughly 10 minutes until softened 
  • Take out a large bowl and add in the spelt flour, tapioca starch, dessicated coconut, rolled oats and baking powder. Mix gently to combine 
  • Place the butter and honey in a small saucepan over a low heat to melt
  • Crack the egg into the dry ingredients and roughly whisk 
  • Drain the apricots and roughly mash with a fork 
  • Pour the melted honey and butter and vanilla into the dry ingredients with the apricots and mix well to combine 
  • Begin rolling the mixture into balls and pressing them down onto the baking tray to form the shape of your cookies 
  • Place into the oven and bake for roughly 13 minutes until golden on top
