Apricot + Oat Biscuits
Ingredients
- 1 cup white spelt flour
- 3/4 cup desiccated coconut
- 3/4 cup rolled oats
- 1/2 cup tapioca starch
- 1/2 tsp baking powder
- 1 egg
- 80 grams butter or coconut oil for dairy free
- 2 tbsp honey
- 1/2 tsp vanilla essence
- 2/3 cup dried apricots soaked in boiling water until softened
Instructions
- Preheat the oven to 170 degrees and line a baking tray with baking paper
- Place the dried apricots in boiling water to soak for roughly 10 minutes until softened
- Take out a large bowl and add in the spelt flour, tapioca starch, dessicated coconut, rolled oats and baking powder. Mix gently to combine
- Place the butter and honey in a small saucepan over a low heat to melt
- Crack the egg into the dry ingredients and roughly whisk
- Drain the apricots and roughly mash with a fork
- Pour the melted honey and butter and vanilla into the dry ingredients with the apricots and mix well to combine
- Begin rolling the mixture into balls and pressing them down onto the baking tray to form the shape of your cookies
- Place into the oven and bake for roughly 13 minutes until golden on top
