Banana Fritters

I had some leftover banana yesterday and made these lovely little fritters which Will enjoyed for his afternoon tea! Took me a few minutes to make and are great for lunchboxes too! I trialled them with the flax egg too and they worked well.

Banana Fritters

GF | DF | NF | RSF – EF version
Course Snack
Servings 3 small fritters

Equipment

  • 1 Frying Pan
  • 1 bowl

Ingredients
  

  • 1 small ripe banana mashed
  • 1 egg
  • 1/4 cup cassava flour (or can use spelt, buckwheat, plain)
  • 1 tbsp flaxseed meal *optional but great nutritional boost!

Egg Free Version:

  • 1 small small ripe banana mashed
  • 1 flax egg 1 tbsp flaxseed meal mixed with 3 tbsp water and allowed to set.
  • 1/3 cup cassava flour Or can use spelt, buckwheat, plain

Instructions
 

  • Mash banana with back of fork, then add all other ingredients and whisk with fork until well combined.
  • Heat some ghee or coconut oil or butter in frying pan, and place the mixture into the frying pan. There should be enough batter for 3 small fritters.
  • Pan fry on each side until cooked through, enjoy!

Notes

Age Appropriate: 1 meal a day or when egg is tolerated
