These pancakes have a slightly different texture to regular pancakes - they are more bouncy - yet still delicious!
Flaxseed Banana Pancake - Egg free

- bowl
- Measuring Spoons

- Frying Pan
- Mixing spoon or spatula
- Whisk or Fork
- 1 ripe & spotty banana
- 5 tbsp cassava flour
- 1 cassava flour
- 3 tbsp milk of choice
- 3 tbsp ghee or butter
- 1 tsp baking powder
Mash your banana well into a bowl
Mix your flaxseed egg by pouring 2.5 tablespoons of water into one tablespoon of ground flaxseeds (flaxmeal). Mix well and allow it to thicken
Add the flour, butter or ghee, milk and baking powder to the bowl with the banana
Add the flaxseed egg once thickened and mix all ingredients well until combined
Preheat a frying pan over a medium heat and add an extra 1/2 tablespoon of butter or ghee for frying
Once the pan is hot add in the batter by the spoonful, forming pancakes. Flip once little bubbles appear and the bottom is golden
