    Gingerbread People

    • cookie cutters
    • 1.5 cups spelt flour OR 3/4 cup almond meal and 3/4 cup buckwheat or cassava flour for GF option
    • 1/3 cup coconut sugar
    • 1/2 tsp vanilla powder
    • 1/4 tsp baking powder
    • 2 tsp ginger powder
    • 1/2 tsp cinnamon
    • 1/4 tsp ground nutmeg
    • 1/4 tsp ground clove
    • 1 pinch sea salt
    • 1/4 cup melted butter
    • 2 tbsp milk of choice
    1. Preheat oven to 160C fan forced

    2. In a bowl, combine all of the dried ingredients

    3. In a seperate bowl, combine all of the wet ingredients

    4. Add the wet to the dry ingredients and mix together until a dough forms. If it is too sticky or wet, add some more flour, or alternatively if its too crumbly, add more milk

    5. Roll into a ball and refrigerate, covered for an hour

    6. After an hour, place the dough between two pieces of baking paper and roll until thin (about 1/4cm thick), then using a cookie cutter or a knife, cut into desired shapes.

    7. Place onto prepared baking tray and bake for 10 minutes or until golden, they might still be a bit soft, allow to cool and they will firm up as they cool.
