This is deliciously creamy, high in fibre and perfect for breakfast, snacks and dessert!

Blending the chia seeds is a great way to increase your baby or toddlers fibre intake ( or yours) without the mess of the sticky chia seeds. Mango season is in full swing in the southern hemisphere and this recipe is perfect for a hot summers day.

Mango, coconut and passion fruit chia pudding

    • 1 large mango (or 2 small) flesh removed from the seed
    • 3 passionfruit (saving 1 for the top)
    • 400 ml coconut milk
    • 1/3 cup chia seeds
    • 3 tbsp hemp seeds ( optional)
    1. Combine all of the ingredients into a blender and blend until smooth.

    2. Put into Jars or containers depending on your desired portion sizes. Place it in the fridge to set before you eat it. This will take an hour or two.

    3. The chia mousse will keep in the fridge, sealed for up to 4 days.
