Zucchini Beef 'Roll Ups'

- Oven
- Mixing Bowl
- Grater (for garlic and carrot)
- Knife and cutting board (for spring onions)
- Baking Tray
- Parchment paper (for lining the baking tray)
- 500 grams beef mince
- 50 grams carrot
- 1 tbsp mustard
- 1/2 tsp dried oregano
- 2 garlic cloves
- 1/2 cup cheddar or parmesan cheese
- 1 large zucchini

Preheat the oven to 170 degrees

Add the beef mince to a bowl and mix in the mustard, salt and dried oregano

Finely chop the spring onion using both the whites and greens and add them to the bowl with the beef mince

Finely grate in the garlic cloves and carrot, squeezing the excess juice out of the carrot into the sink before adding to the mix. Mix well until combined

Rinse and grate the zucchini into long, ribbon thickness, thin strands (use the large grater slicer or a mandolin). Place roughly three teaspoons (depending on size of zucchini ribbons) of the beef mixture into the zucchini ribbons and roll up

Complete this process until all the mince has been used and place the roll ups onto a lined baking tray ready for the oven

Grate the cheese and sprinkle over the top of the roll ups to cover

Place the tray into the oven and bake the roll ups for roughly 35 minutes, until golden on top and cooked within
Able to be frozen: yes - would suggest freezing once rolled but before baking
