Fermented Kefir Buckwheat Pancakes/Crepes

- 3/4 cup buckwheat
- 1 cup cows milk or coconut milk kefir
- 2 eggs
- 2 tsp honey or maple syrup
- 1/2 cup milk of choice
- 1 tbsp ghee ((for frying))
- 1 cup mixed berries ((frozen or fresh))
- 1/4 cup water
- 2 tsp chia seeds
Add the buckwheat and kefir to a bowl or container and mix well before leaving to sit on the bench top overnight
The following day add the buckwheat and kefir to a blender with the eggs, milk and sweetener of choice. Blend until smooth
Preheat a pan over a medium – high heat and add in half of the ghee
Once the pan is hot, pour in some batter to form a thin crepe/pancake that covers the pan. Rotate the pan when pouring to help the batter even out thinly to cover the surface of the pan
Cook for a minute or so on the first side and flip when you can see bubbles on top. Cook on the opposite side until slightly golden
Complete this process until you have used up all of the batter
If choosing to make the berry chia jam, stew the berries over a low heat on the stovetop with the water until soft. Remove the berries from the heat and add in the chia seeds. Mix well and allow the seeds to gel for 10 minutes before serving
Serve the crepes/pancakes with chia berry jam and yoghurt or other fillings of choice
* It’s important that the pan you are using is well seasoned to prevent sticking
