Strawberry and Lemon Gummies

Makes roughly 30 small gummies 

Able to be frozen: no

  • 1.5 cups strawberries (measured frozen, slightly defrosted before use)
  • 0.5 cups water
  • 0.25 cups lemon juice
  • 1 tsp honey or maple syrup ((optional))
  • 0.5 cups water (to bloom gelatin)
  • 3 tbsp gelatin
  1. Add 1/2 cup water to a bowl with the gelatin and mix until all lumps have been removed. Set aside to thicken

  2. Place the strawberries, slightly defrosted (or fresh), into a blender with the lemon juice, additional 1/2 cup water and sweetener if using. Blend until smooth

  3. Pour the blended strawberry mix into a small saucepan and spoon in the bloomed gelatin

  4. Place the saucepan over low heat and mix for roughly 3 minutes until the gelatin has dissolved

  5. Pour the mixture into gummy moulds and place into the fridge to set for two hours
