Chicken Noodle Soup

This is the ultimate meal to prepare if there is any illness in the house. It really is a big warm hug, It is comforting, nourishing, and has so many nutrient dense elements. You can use any vegetables you have in the fridge and you can also top it with a fried or poached egg if you would prefer.

You can serve this soup with your choice of prepared chicken. I often use shredded chicken after making bone broth but you can use thigh or breast. Just simply cook it how you like and add it to the soup.

Chicken Noodle Soup

  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • 4cm piece ginger (finely grated)
  • 3 cloves garlic (finely diced)
  • 1/2 stalk lemongrass
  • 1 tbsp soy sauce or tamari
  • 200-250 grams cooked chicken (thigh, breast or shredded)
  • 1.25 litres chicken bone broth
  • 1 head broccoli (or 1 bunch broccolini )
  • 1 cup cabbage or Asian greens (roughly chopped)
  • Noodles of choice (Soba noodles pictured)
  • coriander (for garnish)
  • chilli (for garnish (optional))
  1. In a wok or deep pot, on medium heat, saute the ginger and garlic with the oil and sesame oil for about 2 minutes. Continue to stir so it doesn’t burn. Add the lemon grass and cook/stir for another minute.

  2. Add the broth and tamari and turn the heat down to low. 

  3. Fill a small pot with water and bring it to the boil. Carefully add your eggs and boil for 5-6 minutes. Remove from the heat and take your eggs out with a slotted spoon and run under cold water to stop the cooking process. Let's keep this pot of water boiling and pop your choice of noodles in to cook.

  4. Add the vegetables to the pot of broth and simmer for 3 to 5 minutes, you want them to still have a crunch. 

    You can leave the vegetables in the pot for a bit longer that you are going to puree for your baby, as they will need to be softer.

  5. To serve

    Adult- place your noodles at the bottom of your bowl and top with chicken. Scoop out your vegetables and pour in your broth. Garnish with your peeled boiled egg, coriander and chilli (optional)

    Puree- Blend broccoli, chicken and broth to serve as a puree. You can also mash or puree the boiled egg
