Mango, coconut and passion fruit chia pudding

This is deliciously creamy, high in fibre and perfect for breakfast, snacks and dessert!

Blending the chia seeds is a great way to increase your baby or toddlers fibre  intake ( or yours) without the mess of the sticky chia seeds. Mango season is in full swing in the southern hemisphere and this recipe is perfect for a hot summers day.

Mango Chia pudding

Servings 3 serves

Ingredients
  

  • 1 large mango flesh removed from the seed
  • 3 passionfruit
  • 400 ml coconut milk best from a carton for texture! or milk of choice
  • 1/3 cup chia seeds
  • 3 TBSP hemp seeds optional

Instructions
 

  • Combine all of the ingredients into a blender and blend until smooth.
  • Put into Jars or containers depending on your desired portion sizes. Place it in the fridge to set before you eat it. This will take an hour or two.
  • The chia mousse will keep in the fridge, sealed for up to 4 days.
