These savoury puff pastry scrolls are an easy, freezer-friendly snack or lunchbox addition the whole family will love. With four delicious filling options—pizza, veggie, pesto, or OOMITE & cheese—they’re customisable and perfect for little hands.
If you’re looking for an easy, crowd-pleasing recipe that works for lunchboxes, snacks, or even a quick meal, these puff pastry scrolls are a must-try! Made using Careme butter puff pastry, they’re light, flaky, and packed with flavour.
The best part? They’re totally versatile, and you can switch up the fillings to suit your family’s taste (or whatever you have in the fridge!). These are great for little hands, easy to prep in advance, and freeze beautifully uncooked so you can bake them fresh on the day – no more rock-hard scrolls!
We’ve put together four flavour options to get you started:
Pesto & Parmesan – Simple, cheesy, and packed with flavour.
Pizza – Tomato chutney, ham, cheese, and optional MINGLE pizza seasoning for a fun twist.
Oomite & Cheese – With the option to add Cell Squared desiccated liver for a hidden nutrient boost.
Cottage Cheese & Veggie – A creamy, veggie-packed option with capsicum, parmesan, and baby spinach.
Tip: Make a batch, freeze them uncooked, and bake fresh for perfectly crisp, flaky scrolls every time!

Storage:
Uncooked scrolls:
Freeze on a tray until solid, then transfer to a container or freezer bag.
Store for up to 3 months and bake straight from frozen—just add 5 extra minutes to the cooking time.
Cooked scrolls:
Keep in an airtight container in the fridge for up to 3 days.
Reheat in the oven or air fryer to bring back that crispy, golden texture.
Ingredients
1 sheet butter puff pastry (I use the Careme brand)
1 egg – optional (see notes)
Topping Options:
Option 1 – OOMITE, Liver & Cheese
2 tsp OOMITE (vegemite alternative)
1 handful grated cheese
2 capsules Cell Squared liver & spleen, opened and sprinkled (optional)
Option 2 – Pesto & Parmesan
2 tsp pesto
1 handful grated cheese
1 handful baby spinach, roughly chopped
Option 3 – Pizza
2 tsp tomato paste, relish or sauce
1 handful grated cheese
2 slices ham, roughly chopped
2 tsp fresh basil, roughly chopped
1/2 tsp Mingle pizza seasoning (optional)
Option 4 – Cottage Cheese & Veggie
1/4 cup cottage cheese (I use Barambah – can sub with ricotta, cream cheese, or cashew cheese for dairy-free)
1 tbsp parmesan cheese
1 handful baby spinach, roughly chopped
1/4 red capsicum, finely chopped
Salt and pepper to taste
Method
Preheat & Prepare:
Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
If baking from frozen, preheat the oven just before you’re ready to cook.
Defrost & Roll:
If using frozen puff pastry, remove it from the freezer and let it defrost until just pliable but still cold (around 5–10 minutes at room temp).
Place the pastry on a lightly floured surface or keep it on the plastic film it comes with.
Spread Your Filling:
Evenly spread your chosen filling over the pastry, leaving a small border around the edges. Choose from:

Pesto & Parmesan: Thin layer of pesto + sprinkle of grated cheese

Pizza: Tomato paste, chopped ham, cheese, spinach + optional MINGLE pizza seasoning

OOMITE & Cheese: OOMITE (or Vegemite), grated cheese + optional Cell Squared liver capsule sprinkled over the top

Cottage Cheese & Veggie: Cottage cheese mixed with chopped capsicum, spinach, parmesan, salt & pepper
Roll & Slice (Two Options):

For Individual Scrolls:
Roll the pastry into a log—roll from the long side for smaller scrolls or the short side for chunkier ones. Slice into 1.5–2 cm rounds with a sharp knife. -
For One Large Scroll (snail style):
Roll into a log, then slice lengthways down the middle. Twist or coil into a spiral with the cut side facing up for a beautiful layered effect.
Egg Wash (Optional):
For a golden finish, brush with a lightly beaten egg. If avoiding egg, use milk or a little melted butter.
Freeze (Optional):
To freeze, place uncooked scrolls on a tray and freeze until solid. Transfer to a container or freezer bag for easy baking later.
Bake:
Place scrolls on your lined tray, spaced slightly apart.

From fresh: Bake for 10–15 minutes until golden and puffed

From frozen: Add an extra 5 minutes cooking time
Cool & Serve:
Let cool slightly before serving. These scrolls are perfect for lunchboxes, snacks, or an easy grab-and-go meal.
Ingredient Swaps
Gluten-Free:
Use a gluten-free puff pastry as a direct substitute.
Dairy-Free:
Swap regular cheese for cashew cheese or your favourite dairy-free alternative. Omit parmesan or use a vegan version.
Egg-Free:
Skip the egg wash and use milk of choice (dairy or plant-based) for a golden finish.
