Quinoa

Quinoa GF | DF SaucepancupFork 1 cup quinoa1 1/2 cups  bone broth (or water) ( I usually double this to make enough for a few meals!) Soak quinoa as explained above Add soaked quinoa and broth to saucepan and bring to boilReduce to simmer and cook for 15 minutes (or if doing bigger quantities just wait until broth/water all absorbed).Leave lid on and let sit for 10 mins, then fluff with a fork before serving Delicious, gluten free, high protein and technically a seed not a grain, its a pseudograin! The perfect introductory ‘grain’ for your babies that is power packed with nutrients and a delicious earthy flavour. It is considered a ‘complete’ protein, containing all 9 essential amino acids, so its a great addition for a plant-based diet. I often make a big batch at the beginning of each week, as it’s so easy to incorporate into lunches and dinners, and it freezes well too.    We would recommend that you soak and sour your grains and legumes, especially if following a plant-based diet. This is because they are high in phytic acid which can prohibit nutrient and mineral absorption in the body – mainly iron, calcium and zinc!  To do this just pour desired amount of quinoa in a bowl and cover with warm water and a dash of lemon juice or apple cider vinegar, cover and leave on bench over night (at least 12 hours). Then when ready to cook just drain, rinse and go! Main Course, SaladMediterranean
