Pumpkin Miso and Ginger Soup/Puree

A really simple 6 ingredient soup! This would also be great in the slow cooker or thermo if you have one!

Pumpkin Miso & Ginger Soup/Puree

GF | DF | EF | NF | RSF

  • cutting board
  • knife
  • pot
  •  Blender
  • 2 cups cubed pumpkin
  • 1 small sweet potato ((roughly 3/4 cup))
  • 1 clove of garlic
  • 1 tsp miso
  • 1/2 tsp finely grated ginger
  • 2 cups bone broth
  1. Peel and cube the pumpkin and sweet potato into equal sized pieces. Add them to a pot

  2. Peel and dice the garlic clove and add that to the pot with the finely grated ginger, miso and bone broth

  3. Bring to a boil, then reduce to a gentle simmer uncovered for roughly 25 minutes until the vegetables are soft

  4. Pour into a blender and blend until smooth
