A delicious meal to share with the whole family.
This dish is absolutely perfect for Baby Led Weaning – the tender chicken drumsticks make it easy for your little ones to grasp and munch on, and the chicken is so tender it shreds apart easily. You can also puree this meal for spoon-fed babies.
Featuring a combination of chicken drumsticks, diced tomatoes, red capsicum, bacon, onion, garlic, and paprika, this dish is bursting with flavour and mouth-watering goodness. Remember we don’t need to be afraid of flavour when introducing solids to our little ones!
One of my favourite things about this dish is how easy it is to put together. Its a one-pot wonder (yay for not as much washing up!) You can serve this with steamed potatoes, fresh dill and a dollop of sour cream if you wish, or couscous, rice or quinoa!
Chicken Paprika
- 1 kg chicken drumsticks
- 400 grams diced tomatoes
- 1 red capsicum
- 50 grams bacon
- 1 brown onion
- 2 garlic cloves
- 2 TBSP paprika
- salt and pepper to taste
- 1 TBSP fat to cook (olive oil, ghee, tallow, lard)
- 2 cups water (to cover)
Finely dice the onion and garlic
Place a pot over a medium heat and add in the cooking fat
Once hot add the onion and garlic and cook until soft
While you are waiting, dice the capsicum and bacon
Add these to the pot when the onion is cooked
Remove the pot from the heat and add the paprika, stirring well. Place the pot back on the heat and now add in the chicken too
Top with water until the tops of the chicken are just poking out
Bring the pot up to a boil, then reduce to a gentle simmer for roughly two hours. By this stage the chicken will be so soft, it will be almost falling off the bone
Season with salt and pepper to taste. You can serve this with steamed potatoes, fresh dill and a dollop of sour cream if you wish
