Lemon and Coconut Bliss Balls

A delicious snack that is perfectly balanced – containing all three macronutrients (fats, protein and carbohydrates) so even though they are sweet, the protein and fats from the seeds will balance out the sugars. These are appropriate from 12 months, or younger if you omit the honey. They also make the most perfect pregnancy or postpartum snack!!

These balls will keep in the fridge for up to 7 days or in the freezer for 1 month.

Lemon and Coconut Bliss Balls

Ingredients
  

  • 2 cups raw cashews
  • 1 cup raw almonds
  • 15 fresh medjool dates, pitted
  • 6 capsules Cell Squared Beef Spleen & Liver
  • 1 tbsp honey
  • 1 lemon, zest and juice
  • Small pinch of sea salt
  • 1 cup desiccated coconut

Instructions
 

  • Add the cashews and almonds into a food processor and blitz until they resemble a fine ‘meal’ consistency. Add in dates and blitz again until the mixture starts to get sticky and a dough starts to form.
  • Add the honey, lemon zest and juice and a pinch of salt and blitz again until well combined, sticky and the mixture holds together when squished together.
  • Add the contents of 6 Cell Squared Beef Spleen & Liver capsules
  • roll the mixture into 15 even-sized balls and roll in the desiccated coconut.
