AGE APPROPRIATE: When tolerating egg

These little pancakes are so quick, easy, nutritious and yummy! They make the perfect breakfast, or a great snack for your little one when you’re out and about.

They are gluten free, dairy free and nut free (if you omit the nut butter) making them also perfect for little lunchboxes. They are made with tapioca flour (or you can use cassava flour); which is the starch from the cassava root. Tapioca is very easy to digest, gluten free, a great source of resistant starch (feeding the good bacteria in the gut) and free of the major allergens.  You can also remake the batter the night before, and then on those busy mornings just pull out of the fridge, cook and enjoy.

Hello!! Mine are chewy, I have tried making twice now and not sure what I'm doing wrong!? Should they be chewy?! I am not sure I should give my 8m old chewy texture!! Thank you!

Luka McCabe says:

tapioca flour definitely has a chewy texture but I find this texture great for babies as they don't 'disperse' through the mouth which can be confusing for them to work out 'where' to chew!

Make these for myself and my toddler for brekky often. I double the recipe and that’s enough for the two of us. A chewy texture but means less crumbs everywhere! Also like this recipe as a backup because they are ingredients I always have in the house.
