Choc Collagen Cookies

Choc Collagen Cookies

Course Snack

Ingredients
  

  • 2 cups almond meal
  • 1/4 cup maple syrup
  • 3 TBSP collagen we use CHIEF vanilla for this recipe, code BOOBTOFOOD
  • 110 ml coconut oil or olive oil
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder GF if gluten not tolerated
  • 60 grams chocolate chips

Instructions
 

  • Preheat the oven to 170°C fan-forced and line a large baking tray with baking paper.
  • Add all ingredients (except the chocolate) into a large bowl and stir until just combined. Fold through the chocolate pieces, if using.
  • Roll the mixture into 8 even-sized balls and press them into round cookie shapes using your fingers. Space them evenly apart on the baking tray.
  • Place into the oven and bake for 15-20 minutes until golden, but still a little soft in the middle; they will firm up as they cool.
  • Remove from the oven and transfer to a wire rack to cool and firm up before serving.

Notes

These cookies will keep covered on the bench top for up to 3 days, or freeze for up to 3 months.
