Choc Collagen Cookies
Ingredients
- 2 cups almond meal
- 1/4 cup maple syrup
- 3 TBSP collagen we use CHIEF vanilla for this recipe, code BOOBTOFOOD
- 110 ml coconut oil or olive oil
- 1 tsp vanilla extract
- 1/2 tsp baking powder GF if gluten not tolerated
- 60 grams chocolate chips
Instructions
- Preheat the oven to 170°C fan-forced and line a large baking tray with baking paper.
- Add all ingredients (except the chocolate) into a large bowl and stir until just combined. Fold through the chocolate pieces, if using.
- Roll the mixture into 8 even-sized balls and press them into round cookie shapes using your fingers. Space them evenly apart on the baking tray.
- Place into the oven and bake for 15-20 minutes until golden, but still a little soft in the middle; they will firm up as they cool.
- Remove from the oven and transfer to a wire rack to cool and firm up before serving.
