Christmas Rocky Road

It’s nearly Christmas, and we’ve got the perfect festive treat for you and your little ones with our scrumptious Christmas Rocky Road! This recipe is not only delicious but also full of protein and fats to keep those tiny toddlers bouncing with joy (without the big sugar crash!) throughout the festive season.

Our nutrient-packed Christmas Rocky Road is made with delightful ingredients like goji berries, sultanas, almonds, and nut butter.

Go ahead and give this festive treat a go – a special meal for the whole family that is a fun one to get your toddler involved helping you make it! And who knows, this might just become a new tradition for your family Christmas celebrations.

Christmas Rocky Road

Ingredients
  

  • 1/2 cup goji berries
  • 1/2 cup sultanas
  • 3/4 cup desiccated coconut
  • 1/2 tsp cinnamon
  • 2/3 cup almonds roughly chopped
  • 1/3 cup cacao powder
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup peanut butter or almond butter
  • 1/2 tsp vanilla extract
  • 2 TBSP butter can sub for extra coconut oil for dairy free option

Instructions
 

  • Take out a large bowl and add in the goji berries, sultanas, desiccated coconut, cinnamon and cacao powder. Roughly chop the almonds and add those in too. Stir well
  • Place the coconut oil, honey, peanut butter, vanilla extract and butter into a small saucepan and heat over a low heat until melted. Pour straight into the dry ingredients and mix well
  • Pour into a baking dish lined with baking paper and smooth it over with the back of a spoon.
  • Place into the freezer to set for three hours until cutting.

* Store in the freezer until ready to be consumed 

    Notes

    Suitable for over 12 months. Chop almonds fine for under 2 years of age.
