Coconut is very high in virus fighting lauric acid – much like the composition of breastmilk, so it’s the perfect first food! It’s very nutritious, high in fatty acids that help keep the gut healthy, high in minerals, fiber, vitamins and amino acids. You can offer baby coconut cream straight off the spoon or use it to cook with! It makes a stew that much richer and delicious and the fats will help the body absorb the stews nutrients. 
Here I’ve made a coconut and banana custard!
Make sure you buy coconut milk that has no additives! I use the brand ‘honest to goodness’ or Ayam, which have a good mixture of cream and milk in the can!

 

Coconut Banana Custard

GF | DF | RSF| NF

  • Oven
  • Muffin tin
  • Deep roasting pan
  • Whisk
  • bowl
  • 1/2 cup coconut milk
  • 1/2 cup coconut cream ((i use AYAM))
  • 3 egg yolks 
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla bean paste
  • 1 small ripe banana mashed
  1. Preheat oven to 170 bake

  2. Place all ingredients in a bowl and gently whisk until smooth and combined

  3. Grease a muffin tin with small amount coconut oil

  4. pour in custard mixture (makes about 6)

  5. place muffin tin into a deep roasting pan, pour enough water into roasting pan until it comes up two-thirds of the way up the side of the muffin tin.

  6. bake for 45 mins to 1 hour until the custards look/feel set (they will firm more as they cool)

  7. remove muffin tin from water and allow to cool until slightly warm – they will have a custard like consistency

best served warm and should be able to be stored in refrigerator for 5 days

If making for a toddler (over 1) you can add 1 TBSP maple syrup to make more tasty

MAKES: about 6 baby serves
AGE APPROPRIATE: 6 months + when tolerating eggs

Hello. Would this be freezable? Thinking it would be good to have these on hand for either breakfast or a snack but as we are a little time pour, making them in a batch would mean we would actually be able to have them!

Hello! I have tried this a few times and whilst they taste delicious I can barely get them out of the moulds as they are quite wet even after cooking for 1 hour. Any tips?

I put the pan with water in the oven while it heated up and i also set the oven to 350farenheit which seems to be about 170 Celsius and they turned out great.

Wondering if the temp in the recipe needs to be clarified.

Yes, try a silicone mould :) they pop out quite easy! they are meant to be quite soft for baby

I wouldn't do as a first food, as it contains egg yolk which is an allergenic, however once egg yolk has been successfully introduced a few times then it is an appropriate food! xx

Try a chia egg, 1 egg is 1:3 (1TBSP chia and 3TBSP water let it sit for 20 min and then add as substitute for egg) works really well in all my recipes I have tried with a chia egg.
