Chickpea & Quinoa Stew GF | DF | RSF | EF | NF Large pot with lidKnife & cutting boardWooden spoon or spatulaMeasuring Spoons 400g cooked/tinned chickpeas1/2 cup uncooked quinoa3 cups bone broth400g tinned diced tomatoes2 tbsp tomato paste1 brown onion1 small zucchini1 capsicum1 small white potato1 small eggplant (1/4 large)1 carrot1 garlic cloves1 tsp turmeric powder1 tsp cumin1 tsp cumin1 tsp cumin Peel and finely dice the onion and garlicChop the zucchini, carrot, eggplant, potato and capsicum into small equal sized piecePreheat a large pot over a medium heat with 1 tbsp of cooking fat. Once hot add in the onion and garlic and saute until softNext pour in the chopped vegetables and fry for two minutesThen stir in the spices and cook for one minutePour in the broth, diced tomatoes, tomato puree, quinoa and chickpeasBring to a boil and then reduce to a gentle simmer, covering the pot with a lidCook on low for 40 minutes, until the veggies have softened.
