About the recipe

These lamb liver koftas are a nourishing, iron-rich meal for the whole family. Lamb is naturally high in haem iron, and when combined with liver or a desiccated organ powder, these koftas become a true superfood option for babies, toddlers, and adults alike. The texture is soft enough for baby-led weaning, yet still juicy and flavourful for older children and adults.

They’re quick to prepare and can easily be cooked on the stovetop or barbecue. We love serving them with wraps or yoghurt flatbread, a dollop of Greek yoghurt mixed with lemon and cumin, some fresh herbs, cucumber, sauerkraut, and salad – a meal everyone at the table can enjoy together. You can also freeze a batch for easy weekday lunches or lunchbox additions.

Age Appropriate:

6 months +

Notes for Serving BLW:

For baby-led weaning, serve the kofta in long, finger-sized strips that are easy for little hands to grasp.

Serving Suggestions:

Serve with Greek yoghurt mixed with cumin and lemon, flatbread or wraps, fresh salad, and sauerkraut. For babies, pair with soft steamed vegetables or mashed sweet potato.

Storage for Freezer and Fridge:

Store in the fridge for up to 3 days or freeze for up to 2 months. Reheat thoroughly before serving.

Ingredients

500 grams lamb mince
1 big handful flat leaf parsley finely chopped
1 zest of lemon
2 teaspoons cumin
1 teaspoon garlic powder
1–2 raw chicken livers finely chopped or grated if frozen (or 1–2 serves desiccated liver or organ powder)
1 tablespoon ghee or olive oil for cooking

Method

Add all ingredients into a bowl and use your hands to mix until well combined.
Roll the mixture into small sausage shapes (around 9–12).
Heat a frying pan over medium-high heat and add the ghee or olive oil.
Once hot, add the koftas, being careful not to overcrowd the pan.
Cook, turning occasionally, for about 10 minutes or until cooked through.
Alternatively, cook on the barbecue for a smoky flavour.

Ingredient Swaps
Swap lamb mince for beef or chicken mince if preferred.
Use fresh garlic instead of garlic powder.
Desiccated organ powder from Cell Squared makes a simple, fuss-free alternative to raw liver for a nutrient boost.
