AGE APPROPRIATE: when tolerating soy (miso)

A really simple 6 ingredient soup! This would also be great in the slow cooker or thermo if you have one!
Pumpkin Miso & Ginger Soup/Puree
Equipment
- cutting board
- knife
- pot
- blender
Ingredients
- 2 cups cubed pumpkin
- 1 small sweet potato roughly 3/4 cup
- 1 clove of garlic
- 1 tsp miso allergen*
- 1/2 tsp finely grated ginger
- 2 cups bone broth
Instructions
- Peel and cube the pumpkin and sweet potato into equal sized pieces. Add them to a pot
- Peel and dice the garlic clove and add that to the pot with the finely grated ginger, miso and bone broth
- Bring to a boil, then reduce to a gentle simmer uncovered for roughly 25 minutes until the vegetables are soft
- Pour into a blender and blend until smooth
