Baked Muesli Bars

These oven baked muesli bars  are so easy to make. They can be different every time you make them depending on what nuts, seeds and dried fruit you have on hand. You can make this slice nut free by just using all seeds which I have done many times to make it daycare and school safe. 

Baked Muesli Bars

Ingredients
  

  • 1 3/4 cups rolled oats
  • 1 1/4 cup chopped nuts or seeds *see note
  • 2 tbsp chopped nuts or seeds for sprinkling on the top ( I used sesame seeds) 
  • 1 cup dried fruit goji berries, currants, sultanas, raisins, chopped figs or chopped dried apricots
  • 80 grams coconut oil
  • 110 grams tahini
  • 110 grams honey

Instructions
 

  • Preheat the oven to 180 degrees celsius.
  • In a large bowl combine the oats, nuts and seeds 
  • Place a small saucepan/pot on the scales and combine the three wet ingredients into the pot.This is an easy way to measure them all and less cleaning up. Transfer to the stove and heat on very low until they have combined well and melted. 
  • Pour the wet ingredients into the dry and stir well to combine. Press into a 24cm square tin ( or similar) lined with baking paper, sprinkle your additional nuts and seeds onto the top and bake for 20 minutes until golden.
  • Allow to cool, slice and enjoy!

Notes

*note- you can use pepitas, sesame, hemp, linseeds, sunflower and chopped nuts such as almonds, cashews, Brazil, walnuts and hazelnuts to name a few. Feel free to use any combination you like. Just stick the measurement in the recipe 
Store in the fridge for up to a week or in the freezer for up to 3 months.
