Chicken and Sweet Potato Bites
Equipment

Ingredients
- 150 grams chicken mince
- 140 grams sweet potato
- 1 tsp paprika
- 1 garlic clove
- 1/2 tsp salt if appropriate
- 2 tbsp tapioca starch/flour
- 3 tbsp tallow or lard for frying
Instructions
- Peel and finely grate the sweet potato, squeezing the juice out into the sink before adding it to a bowl
- Take the chicken mince and squash it with the side of the knife to smooth out the texture. Add the chicken to the bowl with the sweet potato
- To the bowl also add the paprika, finely grated garlic clove, salt and the tapioca starch. Mix well to combine
- Roll into nugget size balls
- Preheat a large frying pan over a high heat and add in the tallow/lard. Once hot, place the bites into the pan
- Slightly reduce the heat to medium – high and fry on each side until golden, crunchy and cooked within
- * You can bake these in the oven instead of frying if you wish – I recommend drizzling them with olive oil and baking on 180 degrees for roughly 35 minutes until golden and cooked within. Flip the bites at the half way cooking point!
