Bolognese Bites

  • 125 grams leftover cold beef bolognese
  • 100 grams sweet potato (par boiled or baked)
  • 35 grams cheese (cheese of choice)
  • 15 grams sourdough breadcrumbs (blitz some stale sourdough in a food processor until it resembles a crumb)
  1. Chop a portion of sweet potato with the skin on and boil it or bake it in one large piece until roughly 3/4 of the way cooked. Allow to cool completely

  2. Preheat the oven to 180 degrees

  3. Take out a small bowl and add in the cold bolognese, cheese and breadcrumbs. Remove the skin from the sweet potato and gently grate it into the mix. Mix well to combine

  4. Take roughly 1.5 tbsp of the mixture and roll into balls placing onto a lined baking tray

  5. Bake for roughly 15 minutes until golden on top 

Note:
The bolognese sauce needs to be reduced well to work well in this recipe as too much liquid will make them fall apart when heated in the oven
 
You can make your own sourdough breadcrumbs by saving the end bits of your sourdough bread. Let them dry out and blend in a food processor or blender until fine
