Edamame and Avocado Puree/Dip

This recipe is a great introduction to the allergen soy, it makes a great puree, but also a delicious dip if you are offering your little one finger foods, you can spread it onto finger foods or encourage your little one to ‘dip dip dip’. 

Edamame and Avocado Puree/Dip

GF | DF | EF | NF | RSF – Contains SOY

  • knife
  • cutting board
  • Large bowl
  • Masher
  •  Blender
  • 3/4 cup edamame beans ((purchased frozen and allowed to defrost) )
  • 1/2 ripe avocado 
  • 2 tsp avocado oil 
  • 2 tsp lemon juice 
  • 1 tbsp fresh coriander 
  • Salt to taste  (if age appropriate )
  1. Gently blanch the edamame beans until bright green (drop them into boiling water for about 1 minute until green). Strain and allow to cool

  2. Add the cooled Edamame beans, avocado, lemon juice, avocado oil, finely chopped coriander and salt if using to a bowl. Mash until you have reached your desired consistency. You could make the dip even smoother with a blender if you wish!
