Ingredients

1 cup fresh or frozen (thawed) strawberries
1 small beetroot (steamed until soft, or use pre-cooked cryovaced beetroot)
1 tsp honey(omit for babies under 12 months)2 tbsp gelatin
½ cup water

Method

Peel and steam the beetroot until soft (or use pre-cooked if short on time).
In a small bowl, mix the gelatin with water and set aside to bloom (it will thicken).
Add strawberries, beetroot, and honey (if using) to a blender and blend until smooth.
Pour the blended mix into a small saucepan, add the bloomed gelatin, and warm gently over low heat, stirring until the gelatin dissolves completely.
Pour into silicone moulds or a small baking dish and place in the fridge for at least 2 hours to set.
Once set, slice into finger-length strips for younger babies or pop out into shapes for older toddlers.
