Cheesy Carrot Bites

  • Grater
  • medium bowl
  • Baking Tray
  • cookie cutter
  • 1/2 cup carrot (finely grated - roughly 1 medium sized carrot - measured once juice has been squeezed out)
  • 1/2 cup cheddar cheese
  • 1 gherkin pickle (or 2 TBSP chopped pickles of choice)
  • 1 egg
  • 1/2 tsp salt
  1. Preheat the oven to 200C degrees and line a baking tray with baking paper

  2. Finely grate the carrot and squeeze the juice out over the sink. Add the carrot to a bowl

  3. Slice the gherkin and finely chop, adding this to the bowl with the carrot

  4. Grate the cheese and add that to the bowl with the salt. Crack in an egg, gently whisk and mix well

  5. Place your choice of cookie cutter onto the baking tray and take roughly one teaspoon of the mixture and press it firmly into the cookie cutter. You want these to be thin, so you may need to use a little less for a smaller cookie cutter. Gently remove the cookie cutter and repeat using all of the mixture

  6. Bake in the oven for roughly 10 minutes until golden and crispy

Able to be frozen: yes, however they will not be as crunchy when defrosted
