A delicious salad to share with your little one!

Potato, pea and feta salad

  • 600 grams white potato
  • 400 grams sweet potato
  • 3/4 cup boiled or steamed peas
  • 120 grams feta
  • salt and pepper to taste
  • olive oil to coat potato

Dressing

  • 2 tsp lime juice
  • 1/2 tsp honey (omit under 12 months or swap for maple syrup)
  • 2 tsp mustard
  • 2 tsp olive oil
  1. Preheat the oven to 180 degrees Celcius and line a baking tray with baking paper

  2. Rinse and chop the potato and sweet potato into small equal sized pieces and place them on the baking tray. Drizzle with olive oil and salt and bake for roughly 35 minutes until soft

  3. Boil or steam the peas until they are bright green and set aside

  4. Prepare the dressing by adding the lime juice, mustard, honey and olive oil to a little bowl and whisk to combine with a fork

  5. Add the roasted potatoes and sweet potatoes to a large bowl with the peas and crumbled feta

  6. Drizzle the dressing over the salad and mix gently to coat. Season with salt and pepper to taste

You could easily add some protein here to make it more of a complete meal. Chicken or chickpeas would be delicious!
