Strawberry and Lemon Gummies
Ingredients
- 1.5 cups strawberries measured frozen, slightly defrosted before use
- 0.5 cups water
- 0.25 cups lemon juice
- 1 tsp honey or maple syrup (optional)
- 0.5 cups water to bloom gelatin
- 3 tbsp gelatin
Instructions
- Add 1/2 cup water to a bowl with the gelatin and mix until all lumps have been removed. Set aside to thicken
- Place the strawberries, slightly defrosted (or fresh), into a blender with the lemon juice, additional 1/2 cup water and sweetener if using. Blend until smooth
- Pour the blended strawberry mix into a small saucepan and spoon in the bloomed gelatin
- Place the saucepan over low heat and mix for roughly 3 minutes until the gelatin has dissolved
- Pour the mixture into gummy moulds and place into the fridge to set for two hours
