About the recipe

These mango chia jam gummies are the ultimate fun snack – naturally sweet, full of fibre and healthy fats from chia, with a protein boost from gelatin. They’re soft, chewy, and easy to cut into little shapes, making them a great addition to lunchboxes or a quick after-school treat.

For this recipe we have used our Mango Chia Jam. You can also use the berry chia jam recipe in Milk to Meals.

Storage for Freezer and Fridge:

Keep in an airtight container in the fridge for up to 1 week. Not suitable for freezing.

Age Suitable:

Appropriate from 6 months+ if honey is omitted in the jam. We would recommend setting the gummies into a longer glass container so that you can cut it into finger shaped strips rather than a traditional gummy mould.

Ingredients

  • 1 cup mango chia jam
  • 1/4 cup water
  • 2 TBSP gelatin

Method

  • Place the water in a small bowl and sprinkle the gelatin evenly over the top. Let it bloom (the gelatin will absorb the water) for 2–3 minutes.
  • Transfer the bloomed gelatin and the chia jam to a small saucepan.
  • Warm gently over low heat, whisking until the gelatin is completely dissolved and the mixture is smooth. Don’t boil.
  • Pour into silicone moulds or a lined baking dish or glass container.
  • Refrigerate for 2–3 hours, or until fully set.
  • Pop out of moulds or slice into cubes/strips and enjoy!
